Red Velvet Cake


Ingredients:
  • 1/2 C. Crisco
  • 2 eggs
  • 1 1/2 C. white sugar
  • 2 T Cocoa
  • 2 1/4 C. Cake flour
  • 2 oz. Red cake coloring
  • 1 tsp. Zalt
  • 1 C. Buttermilk
  • 1 T. Vinegar
  • 1 tsp. Vanilla
  • 1 tsp. Soda

Beat Crisco, sugar and eggs. Make a paste of cocoa and cake coloring. Add to shortening mixture. Beat in flour, salt, buttermilk and vanilla. Add but do not beat vinegar and soda ( fold in).

Bake in two 8" pans ( or 9x13" ) at 350 degrees for 30 to 35 minutes.

Frosting Ingredients:

  • 3 1/2 C. Powdered sugar
  • 2 egg whites ( room temperature )
  • 2/3 C. Crisco
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 2 T. water

Frosting ( Sister Bonnie's recipe ):

  • 3 oz box of instant white chocolate pudding
  • 1/3 C. milk
  • 1/2 C. powdered sugar

Mix with spoon, fold in 8 oz cool whip, spread on red cake

To make buttermilk when you don't have any, take one cup milk and 1 tablespoon lemon juice or 1 tablespoon vinegar. It works just as well.
