Pour over bananas when cool.  Can be used for banana pudding also.  Beat egg whites til stiff and put on top of banana pie and put in 400 degree oven until brown.&lt;br /&gt;&lt;br /&gt;Cool and cut. Heat the pineapple juice to boiling point. Add in the gelatin and stir until dissolved. Set this aside to cool.&lt;br /&gt;&lt;br /&gt;Cream the sugar with the butter; add in the egg yolks. Then add the pineapple, the gelatin mix and the nuts. Beat the egg whites until they 're stiff and fold them into the creamed mixture. Crush the vanilla wafers. May add more flour, up to another 1/2 cup, but dough should not be too dry. A slightly sticky texture produces a softer cookie. Chill dough.&lt;br /&gt;&lt;br /&gt;Roll out approximately 1/3 of dough at a time on floured surface, preferably a pastry cloth, and with a stockinette on rolling pin. Roll dough to thickness of 1/4 to 3/8 inch. Dip cookie cutter in flour before cutting out each cookie. Use only enough flour to allow handling of dough. May gently re-roll or press scraps together to use all the dough. Place on ungreased cookie sheet. Bake at 420° until set, but barely beginning to turn a light brown. She also worked up a recipe so that she could share it with at family dinners.&lt;br /&gt;&lt;br /&gt;Serves 6 or 10:&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;ul&gt;&lt;li&gt;8 baked potatoes&lt;/li&gt;&lt;li&gt;1/2 C. butter melted&lt;/li&gt;&lt;li&gt;1/2 tsp. salt&lt;/li&gt;&lt;li&gt;1/2 tsp. paprika&lt;/li&gt;&lt;li&gt;1/2 C. finely chopped green onions&lt;/li&gt;&lt;li&gt;1/2 C. finely chopped cooked bacon&lt;/li&gt;&lt;li&gt;1/2 C. cooked ham or shrimp (optional)&lt;/li&gt;&lt;li&gt;1/2 C. chopped green peppers&lt;/li&gt;&lt;li&gt;1 C. (4 oz)  shredded cheddar cheese&lt;/li&gt;&lt;li&gt;1 C. sour cream&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;Bake potatoes at 400 degrees one hour or until tender.  Cool slightly; cut in half length-wise and scoop out pulp, leaving 1/4 inch of pulp still attached to skin.  ( The potato pulp you remove can be refrigerated for use later. )  Cut skins into strips or halves, brush skin sides with melted butter and place on a baking sheet.  Sprinkle pulp sides with salt and paprika; cover with the green onions, bacon, ham or shrimp and chopped peppers.  Top with the cheese. Bake at 450 degrees until cheese is melted and skins are crisp about 10 to 15 minutes.&lt;br /&gt;&lt;br /&gt;Garnish each skin with a dollop of sour cream. Sugar&lt;/li&gt;&lt;li&gt;1/3 C. All-Purpose flour&lt;/li&gt;&lt;li&gt;2 C. Milk&lt;/li&gt;&lt;li&gt;2 egg yolks, beaten&lt;/li&gt;&lt;li&gt;1 T. Butter&lt;/li&gt;&lt;li&gt;1 t. Vanilla extract&lt;/li&gt;&lt;li&gt;36 Vanilla wafers&lt;/li&gt;&lt;li&gt;3 medium ripe bananas, cut into 1/4-inch slices&lt;/li&gt;&lt;/ul&gt;Meringue:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;2 egg whites&lt;/li&gt;&lt;li&gt;1 t. vanilla extract&lt;/li&gt;&lt;li&gt;1/8 t. cream of tartar&lt;/li&gt;&lt;li&gt;3 T. Sugar&lt;/li&gt;&lt;/ul&gt;In a large saucepan, combine sugar and flour.  Stir in milk until smooth.  Cook and stir over medium-high heat until thickened and bubbly.  Reduce heat; cook and stir 2 minutes longer.  Remove from the heat.  Stir a small amount of hot filling into egg yolks;  return all to the pan, stirring constantly.  Bring to a gentle boil; cook and stir 2 minutes longer.  Remove from the heat. Gently stir in butter and vanilla.&lt;br /&gt;&lt;br /&gt;In an ungreased 8-in. square baking dish, layer a third of the vanilla wafers, banana slices and filling.  Repeat layers twice.&lt;br /&gt;&lt;br /&gt;For meringue, in a large mixing bowl, beat the egg whites, vanilla and cream of tartar on medium speed until soft peaks form.  Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form.  Spread evenly over hot filling, sealing edges to sides of baking dish.&lt;br /&gt;&lt;br /&gt;Bake at 350 degrees for 12-15 minutes or until meringue is golden.  Cool on a wire rack for 1 hour.  Refrigerate for at least 3 hours before serving. Put in oven 350 to 375 degrees for 5 to 10 minutes.&lt;/p&gt;&lt;p&gt;Filling:&lt;/p&gt;&lt;ul&gt;&lt;li&gt;2 Eggs ( yolks )&lt;/li&gt;&lt;li&gt;5-T. Flour&lt;/li&gt;&lt;li&gt;1/2-C. Measure 2 C. flour, 1 tsp. soda.  Put half of mixture in and stir.  Add 1 C. unpeeled chopped apples, 1 C. nuts, 1/4 C. apple juice or milk. Milk&lt;/li&gt;&lt;li&gt;1/2 tsp. Vanilla&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;Mix well the sugar, flour and nutmeg, add cream and salt.  Stir well and add vanilla.  Pour into pie shell. Milk&lt;/li&gt;&lt;li&gt;3 eggs ( separated )&lt;/li&gt;&lt;li&gt;2 1/2 to 3 C. Brown Sugar&lt;/li&gt;&lt;li&gt;1 T. Heaping flour&lt;/li&gt;&lt;li&gt;1/2 tsp. salt&lt;/li&gt;&lt;li&gt;3/4 C. Pecans ( cut up )&lt;/li&gt;&lt;li&gt;1/2 C. Oleo or butter&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;Mix sugar and flour, add oleo, then beaten egg yolks, add milk and pecans, last fold in egg whites and pour into unbaked pie shell.  Put pecans on top. Tender quick&lt;br /&gt;1-T. Liquid smoke&lt;br /&gt;12-C. Cold water&lt;br /&gt;&lt;br /&gt;Put turkey in large pan, I use my roaster.  Set in refrigerator for three days.  Keep turning it every day.  Wash it first before you do all this.  Butter it all over. When you get ready to roast it, add a little water to bottom of roaster.  Roast for 5-6 hours at 300 degrees, or maybe a little longer.&lt;br /&gt;&lt;br /&gt;I double the recipe.&lt;br /&gt;If it is frozen, thaw in refrigerator.&lt;br /&gt;&lt;br /&gt;Be sure to turn turkey every hour from side to side and also you might want to take a spoon and baste it every hour. Water&lt;/li&gt;&lt;li&gt;1-C. White Sugar&lt;/li&gt;&lt;li&gt;2-T White Karo Syrup&lt;/li&gt;&lt;li&gt;3-T Cornstarch&lt;/li&gt;&lt;li&gt;Dash of salt&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;br /&gt;Cook until clear. Take off fire, add 3-T Strawberry jello, a few drops of red food coloring. Cool and pour over fresh strawberries in a bake pie shell.  Put whipped cream on top and serve.
